Humboldt Fog
An elegant, soft, ripened goat's milk cheese.  The texture is creamy and luscious with a subtle tangy flavor.  Each handcrafted wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior to give a distinctive cake-like appearance.
 
Port Salut
Port Salut has an honorable past and fascinating history.  It was intially produced in the mid 1800's by Trappist monks, strictly for consumption at their monastery.  Port Salut is a smooth, delectable cow's milk cheese made in the province of Brittany on the west coast of France.  The paste is elastic, cream-colored, soft, and supple.  It is aged for one month.

Brinata
Brinata means early morning frost in Italian.  Brinata is a fresh sheep's milk cheese.  Brinata has an edible, delicate white mold rind and a soft, smooth texture.  It tastes like an exquisite brie, but with a slight sheepy tang and a bit more moisture.  It is best eaten with its rind at room temperature.
                         
Buttermilk Blue
The Freshest raw milk from herds of predominantly Jersey cows issued in the making of Buttermilk Blue. The homogenized (not pasteurized) milk is inoculated with a secret blend of cultures, hooped by hand, pierced, salted then cured for at least 2 months while being rotated regularly to insure a perfect cheese
